The best part about cooking crepes is that the whole process can be completed within 30 minutes. You can make crepes in an electric blender or whisk it manually in a bowl. Whisk together two eggs and one cup of flour. Slowly add in half a cup each, of water and milk. Then, add two tablespoons of butter and a pinch of salt to this mixture. Continue to stir the mixture until the ingredients combine, to a smooth puree. Put a non-stick frying pan on low heat and smear a bit of oil evenly over it. Pour a spoon full of the crepe batter on to the pan and cook until it is light brown on both sides. Et voila! You have got yourself some mouthwatering crepes. Serve it with fresh cream, strawberry sauce or maple syrup, according to your preference.

Mini toast pizzas

Another great dish to add to your summer season brunch repertoire is some bruschetta-like mini pizzas. Amazingly, this delectable dish is so easy to make and has a cook time of less than 30 minutes. Start by cutting five or six slices of delicious bread and put it in a pan to toast, on medium heat. Toast until it turns golden brown in color on both sides and remove it from the frying pan. Now, pour a teaspoon of either olive oil or melted butter over each slice. For the topping, you can finely chop, then sauté a few vegetables like mushrooms, spring onions, capsicum as well as tomatoes with butter and pepper. After adding these toppings to the toast, garnish it with grated cheese and tomato sauce. Then bake it for 5 minutes, so that the cheese melts and oozes all over. Then take thick slices of bread and dip, until it is completely soaked in the mixture. Add a splash of oil in a frying pan on medium heat, and put the soaked bread into it. Toast until golden brown on both sides and add a teaspoon of butter over it. Place the French toast on a plate and drizzle with honey. If you like, you can add a dollop of whipped cream on the top. Then have yourself a merry little brunch!

Chocolate chip muffins

Nothing is better than a chocolate chip muffin and thus, it must find a way into you brunch menu this summer. An easy way to make chocolate chip muffins is to mix two cups of flour, one cup of sugar, two teaspoons of baking powder and a pinch of baking soda, together in a large bowl or a blender. Then add two eggs, a cup of milk, half a cup of melted butter, a teaspoon of vanilla essence and half-cup chocolate chips, to this mixture. Stir until the mixture has blended, into a smooth paste. Grease around ten cup cake tins with butter and preheat the oven at 180° for ten minutes. Then spoon the batter into the cupcake tins and bake for around 20 minutes at the same temperature. The muffins should rise to a springy texture and the chocolate chips will melt gorgeously. These chocolate chip muffins are so tasty, that they don’t need any accompaniment, but you can always drizzle melted chocolate over it for additional flare.

Spanish tortilla

One scrumptious dish that you can add to your summer brunch menu is the Spanish tortilla. This dish is super easy to cook and can be made within half an hour. To make a tortilla, start by finely chopping an onion, some garlic, a green chili and two potatoes. Put a non-stick pan on medium heat and sauté all of these, until the potatoes are soft and cooked. While the potatoes are cooking, beat five eggs and grate two cubes of cheese in a bowl. Now pour the eggs over the cooked potatoes and cook until the eggs turn light brown. Then using a plate, flip it over and cook the other side. Add a pinch of salt and pepper to garnish. Slice and serve with garlic-toasted bread. A delicious addition to any brunch!
