Apple Cider Vinegar is made by fermenting apples and then adding water to the solution, this allows Apple Cider Vinegar or ACV to have 5% acidity. There are different types of ACV like distilled, raw and so on. In fact, unpasteurized ACV is also known as the “mother” ACV, because it is allowed to ferment naturally, with the help of enzymes.
The mother often appears foggy or with substances floating in it, which makes some consumers wonder if the ACV is good for ingestion. The mother is actually a purer form of ACV, and is safe for consumption, in fact, with time the floating pieces settle at the bottom of the bottle. The interesting bit is that ACV has a long shelf life and doesn’t need any refrigeration, although, with time it may change colour.

Researchers are still divided on their opinion about ACV and weight loss promotion, while some believe that this weight loss is brought about because ACV has no calories, and others believe that like apple fills up the stomach for a long time, ACV displays the same properties.

The Annals of Nutrition and Metabolism1 published a study report which stated that 2 tsp apple cider vinegar mixed with a meal of complex carbohydrates and lower the glycemic index of the carbohydrates involved, by 20%. Another study published by European Journal of Clinical Nutrition2 found that the acetic acid in vinegar improves insulin tolerance if taken before meal.
Diabetes Care published a study report with 11 participants, the report stated that people who took 2 tbsp of ACV and cheese reported lower levels of fasting glucose when compared to people who had cheese with water before bed.
However, diabetes control and weight loss are not the only benefits of Apple Cider Vinegar. Alternative Therapies in Health and Medicine published the case of a woman in her early thirties. The woman was suffering from yeast infection in her vagina, which was cured by the application of ACV. This is a unique case, though, researchers are still divided about their opinion on whether ACV is safe for putting in pH sensitive areas of the body, especially the vagina.

Benefits of Apple Cider Vinegar for Weight Loss
Apple Cider Vinegar has been popular for weight loss, however, one must be careful of the kind of ACV one is using for weight loss. Traditionally made apple cider vinegar can be used safely because the production if done the traditional way, takes about one month. However, factory processes can expedite the process to create vats of apple cider vinegar in a single day. The thing to focus upon is the acetic acid, which is an active component.
Acetic acid is alternatively known as ethanoic acid, it is organic in nature, which gives a strong, golden-peach colour and tastes sour. In fact, acetic acid makes 5%-6% of apple cider vinegar, along with water and other acids like malic acid in trace amounts. Animal studies have indicated that the acetic acid present in ACV may have benefits for the human body, including weight loss, researchers believe, this effect is achieved because of acetic acid is a short-chain fatty acid, which easily dissolves into hydrogen and acetate in the body. Here is how this breaking up of acetic acid helps with weight loss:
- Manages Blood Sugar: A rat study found that acetic acid enhanced the blood sugar absorbing properties of muscles and liver. Additionally, acetic acid also played a major role in reducing the glucagon-insulin ratio, which promoted the burning of body fat.
- Metabolism Improvement: Another rat study showed that exposing rats to acetic acid leads to an increase in the AMPK enzyme3 in them, which decreases fat by promoting fat burning, and controlling the production of sugar in the liver.
- Reduction in Storage of Fat: In another study, obese and diabetic rats were treated with apple cider vinegar, and it was discovered that acetate prevented weight gain, as well as activated genes which helped with reduction of storage of belly fat, as well, as storage of fat on the liver.

The study lasted for 3 months, and in these three months, the group drinking 30 ml of apple cider vinegar daily, on an average lost the most weight, at 3.7kgs, however, the group drinking 15ml of apple cider vinegar on an average lost 2.6 kgs. The researchers concluded that apple cider vinegar can reduce total fat, waist size as well as weight.
A follow up study which was conducted for 6 weeks, concluded that high doses of apple cider vinegar can lead to 10% lesser fat gain, as compared to low dosage vinegar consumption which led to only 2% lesser fat gain.

For smooth heels, soak your feet for 30-45 minutes in a mixture of apple cider vinegar and water, mixed at a 50:50 ratio and then remove the stubborn bits with the help of a buff, before rinsing your feet and drying them.

Apple cider vinegar is acidic in nature, which makes it an excellent agent for maintaining the scalp’s pH along with preventing the formation of fungi (dandruff) in your scalp.
Mix 250 ml each of apple cider vinegar and water, tea tree oil (not more than 10 drops) can be added to enhance the antimicrobial activity of the mix, but if you don’t have tea tree oil, this can work well independently too. After shampooing your hair, rinse your hair with this mix. You can also use it on days when you only plan to rinse your hair. If you suffer from dandruff based fungi, then mix more vinegar in your mixture.
- Cure for Sensitive or Itchy Scalp
Nearly 40% of the population suffers from a sensitive scalp which in turn makes it itchy. Harmful chemicals additionally make it more itchy and may cause some inflammation due to irritation. Especially, medicated shampoos can disbalance the pH levels of the scalp. The anti-dandruff rinse we created above works exceptionally well for curing this problem too. - In a mixer add soda, apple cider vinegar, cranberry juice, honey and mix well. Add some more honey according to your taste.
- In a glass pour some crushed ice, and then add the cranberry juice mix.
Slow Cooked Beans
|1 Cup White Beans (soaked in water overnight)||Prep Time: 1 5 Mins.|

|1 ½ Cups of Apple Juice||4-5 Cloves of Garlic (Crushed)|
|Salt to taste||¼ Tsp Powdered Black Pepper|
|2-3 Tbsp Cooking Oil||1 Cup Vegetable Stock|
- In a pressure cooker, heat oil. Add the onions and cook till the onions start getting a golden tinge.
- Add the carrots and garlic and let them cook.
- Now, in a separate bowl mix tomato paste, gud, kasundhi, and sugar. Whisk till a smooth paste is formed, add apple cider vinegar slowly, and whisk continuously. Once the paste is formed add salt and pepper.
- Now, add the paste to the pressure cooker and stir.
- Add vegetable stock to the pressure cooker.
- Let the mix simmer for 1-2 minutes, then add some water and cover the pressure cooker with the lid.
- Allow the beans to cook for 4-5 whistles on medium heat.
- Switch off the pressure cooker, and allow the pressure to come out normally before removing the lid from the cooker.
Apple and Chicken Stew
|500 gms Boneless Chicken (Diced)||Prep Time: 1 5 Mins.|
|2 Medium Onion (Diced)||Cook Time: 2 5- 30 Mins.|
|1 Tsp Rosemary||Serves: 2-3|
|1 inch Ginger (Crushed)||3-4 Sweet Potatoes (cleaned, peeled, and diced)|
|1 Tsp Kasundhi (Bengali Mustard Paste)||1 ¼ Cups Apple Juice|
|½ Tsp Chilli Powder||3 Tbsp Apple Cider Vinegar|
|1 pinch Crushed Nutmeg||4-5 Cloves of Garlic (Crushed)|
|Salt to taste||2 Tsp Powdered Black Pepper|
|2-3 Tbsp Cooking Oil||4 Cups Chicken Stock|
|2-3 Apples (cleaned, peeled, and diced)||2 Tbsp Cornflour|
- Rub the chicken pieces with salt and pepper.
- Now, in a pan heat some oil, and fry the chicken pieces till they are cooked.
- Remove the chicken pieces from the pan and set them aside. Now in the same pan heat up some more oil.
- Add onion to the oil and cook till the onion pieces turn golden.
- Now, add rosemary, ginger, kasundhi, chilli powder, crushed nutmeg, and garlic and cook for a minute.
- Add the chicken stock and apple juice in the pan and stir.
- Add the chicken pieces to the pan again along with corn flour, which is mixed with water and let the stew simmer. If the stew looks too less, add some more chicken stock.
- Once the stew has simmered enough. Add sweet potatoes, apple cider vinegar, salt, and apple pieces, and simmer at low heat for another 5-10 minutes.
- Serve hot.

|1 Tbsp Mayonnaise||Serves: 2-3|

- In a bowl add sugar, apple cider vinegar, salt, colour, and peppercorns and mix well. Add the eggs in the bowl, cover and refrigerate for 4-5 hours. If you are using multiple colours, split the brine in separate bowls and add separate food colours.
- Now take the eggs out of the bowl, and cut them in half. Remove the yolks and place them in a bowl.
- Add white vinegar, kasundhi, curry powder, mayonnaise, and olive oil to the bowl with the egg yolks and mix well. If the mix is inconsistent, add some water. Add salt and pepper to taste.
- Now, place the paste in a piping bag, and fill the eggs.
- Decorate the eggs with coriander leaves and serve.
